Ingredients
  

  • 1 lb ground beef (beef mince) (450g)
  • 1 cup long-grain white rice
  • 1 small onion, diced
  • 1 bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 packet taco seasoning (or homemade mix: cumin, paprika, chili powder, oregano, garlic powder)
  • 1 cup shredded cheese (cheddar, Mexican blend, or your choice)
  • 1 ½ cup beef or chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro (optional)
  • Sour cream and avocado for serving (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cook the beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break up the meat as it cooks. Season with salt, pepper, and taco seasoning. Drain excess fat if necessary.
  • Add vegetables: Stir in the diced onion, bell pepper, and garlic. Cook for 3-4 minutes until the vegetables start to soften.
  • Add the rice and liquids: Pour in the uncooked rice, diced tomatoes (with juices), tomato sauce, and beef broth. Stir everything together and bring to a simmer.
  • Bake the casserole: Transfer the mixture into a greased 9x13-inch baking dish. Cover with aluminum foil and bake for 25-30 minutes, or until the rice is fully cooked and tender.
  • Add cheese: Remove the casserole from the oven, uncover, and sprinkle shredded cheese on top. Bake for an additional 5 minutes or until the cheese is melted and bubbly.
  • Serve: Let the casserole cool slightly, then garnish with fresh cilantro. Serve with sour cream, avocado, or any toppings you like!
